iPhone Without Any Service Fees

I have figured how I will legally get my iPhone activated through AT&T so I can use all of its features except for the phone and not have to switch to AT&T. I really want the iPhone not so much for its phone feature but primarily for Safari and all the other cool stuff that you can do with it. Oh, and to have an iPod Touch with Wi-Fi, built in speakers, a microphone and camera; and the option for me to later use it as a phone. The problem is that you can't just buy the iPhone to use without a service plan of some sort. The I will just go to the store, buy an iPhone, activate it on iTunes. Return it the next day, and let them know that I would like to keep my iPhone because I will be purchasing an iPhone when my contract is up and there is no purpose in me paying a restocking fee only to buy another iPhone in 6 months. I will then have unlocked my iPhone for use, and just have take my SIM card out of the phone until I reactivate it later so AT&T if they can will not remotely lock my iPhone.

I already called AT&T and they said that there is a 3 day return period to avoid loosing your refund for the activation fee and a 14 day return period for the iPhone without having to keep your contract. They also confirmed that if I were to take my SIM card out in the case that I wanted to put it in another phone it would not go back to its initial locked state. The interesting thing about this is that from what I undersatnd the iPhones SIM card will only work on the iPhone. But either way this was a good scenario to get an answer to my question without making it obvious as to what I was planning. I am not quite sure that I would get any answer besides something about how it would have to be activated to work if I were to just ask them how to do what I am going to do.
